On the side, she is the founder of an ed-tech company that teaches digital storytelling skills to thousands of elementary and middle school students through online and in-person programs.

In my twenties I wasn't interested in health at all. I was a girl-on-the-go and mostly ate fast food, restaurant leftovers, or simply skipped the meal. In fact, the only staple foods I kept in my apartment for that entire decade were Crystal Lite, Diet Coke, and Gummi Bears. It probably shouldn't have come as such a big surprise when I awoke one morning blind in my right eye and learned that I had multiple sclerosis.
My a-ha moment came when I realized that inflammation is at the root of most -- if not all -- chronic symptoms that keep us from living our best lives.
